Holden Manz Shiraz 2012

A combination of sweet, dark, cherry fruits goes well with a great chicken or lamb roast.

Harvest 2012 promises to be a much talked about vintage in years to come. Wines from 2012 have already developed great color and tannin structure with a close to ideal acid balance. This is mainly due to the fact that the grapes were allowed a long ripening period with few hot spells in February/March and comfortable cool nighttime temperatures. The use of irrigation was also kept to a minimum and in most blocks there was little irrigation during season. This was as a direct result of good rains during the winter and the positive water retention characteristics of our soils.

Intense purple.

Beautiful aromas of cinnamon, fennel, star anise and Szechuan peppercorns complimented by with fresh red berries.

Clean and subtle on entry, showing ripe, soft tannins with beautiful spicy flavours. Inviting strawberries and raspberries provide a long lingering finish.

Analysis: Alc: 14.61 % • TA: 5.8 g/l • RS: 3.0 g/l • pH: 3.67

These grapes were selected from distinct parcels with varying soil types.  This complexity in growing has resulted in a wonderful intricacy in the wine. The grapes were picked at optimal ripeness to enable the correct balance between sugar and phenolic components. Individual varieties were bunch and berry sorted, crushed and destalked to tank. Fermentation was initiated after 10 days cold soaking. Minimal additions were made to preserve the true cultivar characters of the grapes and to minimize the man-made impact on the wine.

This shiraz was matured in French oak barrels for 18 months. 20% new 225 litre French oak barrels and 80% 2nd and 3rd fill barrels.

Lamb, slightly spicy food, charcuterie.
